I don't think I'm going to leave this island without telling you a little about that the famous bread found typically in Sardinia.. Carta d' Muscia is traditionally found in Sardinia. Named this because you roll it out so thin that you can read a sheet of music through it. Two kinds of flour, duram and semolina. Composed of the three ingredients, flour, water and salt. Baked until crisp in hot oven. Because Sardinia is a Island, Pesce is the main focus with the cuisine.
Malloreddus is the pasta that comes to mind when thinking of Sardinian’s first course. Made from a semolina and saffron, Malloreddus are firm and ridged, conch shape to catch sausage ragu and grated pecorino cheese. So many different cultures have left their mark for centuries to influence the Sardo cuisine.
I have to say Ciao for now.
